Citrus Beer Dressing
1 Tbsp Dijon
1 Tbsp Agave Nectar
1 Tbsp Minced Shallot
1 tsp Orange Zest
1 tsp Lemon Zest
1/2 cup Hazy IPA
1.2 cup Olive Oil
1/2 Lemon (fresh squeezed)
Salt & Pepper to taste
Whisk to Combine.

Beer Braised Carnita Tacos
4 lbs skinless, boneless pork should, cut into 2 inch peices
12 oz Mexican Lager
8 Garlic Cloves
2 large yellow onions (quartered)
3 large limes (quartered)
4 tsp kosher salt
1 can peppers in adobo sauce
1 bay leaf
1-2 tsp olive oil
Corn or flour tortillas
Cilantro

- prepare a large pot or dutch oven on the stove at medium or high heat
- cut the pork shoulder into 2 inch cubes and season with salt and pepper
- coat the bottom of the pan in olive oil until it begins to smoke
- sear the pork shoulder until there is a nice brown crust on each side
- turn heat down to medium-low and add beer, garlic cloves, juice of limes, limes, onions, adobo sauce, and the bay leaf.
- bring to a mild simmer and cover.
- cook for 3 to 4 hours or until the carnitas are tender and pull apart
- remove pork to a pan or cutting board and shred
- sauce (optional), remove the bay leaf, take the remaining liquid in the pan, and blend thoroughly.
- serve the carnitas on your choice of corn or flour tortillas with lime, cilantro, and sliced radishes.
Bacon Wrapped Beer Brats
3 packages of Bratwurst (15 links)
1 package of bacon
2 12oz beers (light lager)
2/3 cup brown sugar
1 tsp cayenne pepper
1 tsp dry mustard
- Preheat oven to 425.
- Pierce each bratwurst with a fork a few times
- In a large skillet, place half of the bratwursts and pour in 24 ounces of American lager. Once the beer is close to boiling, turn it down to low and let the brats simmer for 15-20 minutes, turning after ten minutes. The brats are done with they are no longer pink on the inside.
- Cut bacon into thirds
- In a separate bowl mix the brown sugar, dry mustard, and cayenne pepper together.
- Now that the brats are done, let them cool until you can handle them. Then cut the brats into thirds.

- Bake them for about 20-25 minutes. Let them drain on paper towels before serving.
Imperial Stout Brownie Bites
1 stick unsalted butter
1 cup imperial stout (divided)
3/4 cup cocoa poweder
2 eggs
2 egg yolks
3 cups sugar
1.5 cups flour
1 tsp kosher salt
- preheat oven to 350 and line a 13x9 pan with parchment paper
- In a large saucepan, heat ½ cup stout and butter over low heat until butter is melted.
- Remove from heat and add cocoa powder and stir till cocoa powder is dissolved. Add remainder of stout beer and stir.
- Mix in eggs and yolks.
- Stir in sugar
- Add in flour and salt till combined.
- Pour batter into lined pan and bake about 30 minutes until the top of the brownies form a crust and the edges look baked.
- Cool completely, cut into squares, and enjoy.
